I know.  It’s been a while.  The last article I started to write for this Project was in October.  I remember the exact day; it was immediately after Justin Turner did this.  I tried to put my feelings into words that night, to no avail.  I got swept up in the frenzy of October baseball.  The hope.  I fell in love with the possibility that 2017 might just be the Dodgers’ year.

Then this happened.

And then this happened.

And now this is happening.

And if that wasn’t enough, there’s this.

All of which has made me feel approximately like this.

Now, I’m not saying the serial and crushing failure of Dodger baseball and the casual, inevitable hopelessness of Kings hockey are the most pressing problems of our time. Surely neither is.  But they sure can take it out of you.  I guess my point is, it can be exhausting to love something.  I’m not sure it explains my silence here.  Maybe nothing can.  Maybe an explanation isn’t necessary.

Whatever it was that took me away from this, though, one simple idea brought me back: life is too short not to seize the things that bring you joy and keep them close.

That was probably too heavy for a blog about cheeseburgers.  But it was a couple weeks ago, spending a night at HiHo Cheeseburger with my better half (of whom I haven’t been seeing enough lately) that it hit me.  It’s good to be with people you love doing things you love.  So I’m back to say a few words about HiHo Cheeseburger.  With a little good-natured pedantry on the front end.

The Order: Double HiHo Cheeseburger

The Burger
I’ve eaten some great burgers in the past few months.  I resolve to write about all of them in turn.  But it took something like HiHo Cheeseburger to bring me back.

When you think and write about cheeseburgers, you’re often faced with dishes that are presented as elevated iterations of a classic form.  Los Angeles as a food scene is obsessively colloquial.  The culinary consciousness here is not, by and large, predisposed to traditionalist haute cuisine.  Rather, it is about cultural reflection, comfort, familiarity.  The food in this town is an expressive modality, a way for chefs to give you a window through which you can see who they are and where they come from, not merely what they can do.

It may sound a little high-brow, but it’s really the opposite.  Food in Los Angeles is a way for chefs to connect with the rest of us.  You’re not going to get a glimpse into a fancy culinary school; you’re meant to get a glimpse into someone’s childhood dining room.  What makes food here truly exceptional (rather than just some cute nostalgic exercise) is that those classic dishes are re-imagined with beautiful, leveled-up ingredients.

To wit, all the patties at HiHo Cheeseburger are 100% grass-fed Wagyu beef from First Light collective–sustainably raised, totally free of all hormones, antibiotics, and GMOs.  Laugh all you want at how cartoonishly L.A. that is; it tastes better.  The beef elevates what fundamentally is an unabashed photocopy of a Double-Double (right down to the mustard grilling of the patties) to something memorable.  The quality of the meat makes up for the slightly less-inspired seasoning on the patty.

Other elements of the Double-Double are referenced obliquely, for better and worse. The piquant onion jam admirably replaces the animal style minced onions and Thousand Island.  The brioche bun is a step down from its sponge analogue, though it’s tough to take serious issue with it.  The pickles, made in house, are exceptional: sweet, sharp, and snappy but also, delightfully, a hair thicker than you might expect, nicely rounding out the homage to the Baldwin Park O.G.

Regular readers will know I have no issue with people riffing on In-N-Out, especially if it’s done well.  HiHo Cheeseburger riffs on In-N-Out quite well.  And at $6.95, it’s an extremely high value proposition: you’ll have ample room in your wallet to give the Straus milkshakes or the banana cream pie a spin (and wash it down with a beer if you’re trying to drown your latest Los Angeles sports-induced sorrow).

HiHo doesn’t seek to elevate the concept of the cheeseburger.  Just the execution.  And in doing so, it embodies a lot of what is great about food in Los Angeles: it takes an iconic dish and pays respectful homage to it.  If you’re like me, eating here will remind you of why you love living here.  In spite of the Dodgers.

The Top Ten (November 1, 2016)

The passage of Halloween means that the holidays are upon us.   That means it’s time to engage in behavior that makes you feel deeply guilty at season’s end.  What better way to do that than by checking out the brand new, and thoroughly shaken-up, top ten burgers in Los Angeles?

Sunny Spot

The 405 freeway is maybe best described as a piece of hell that Los Angeles chose to annex in 1964.  It (along with bananas-high taxes) is the price we pay for living in a sun-soaked paradise: a throbbing vein of gridlock, on which – at the best of hours – brake lights pulse rhythmically.  Quite often though, it’s worse, and the string of red lights in front of you looks like a fluorescent snake if you squint.

For those who live in Los Angeles, the 405 is a conversation piece.  When I meet friends for a meal in Santa Monica or Venice, inevitably I will describe to them either a) what a tragedy the 405 is today, or b) how I skillfully, creatively managed to circumvent the 405.  These topics are staples of the conversational diet in this town.  And they make us an easy target.

I recently spent a Saturday morning – and part of the afternoon – on the 405, driving to brunch at Sunny Spot.  My interminable journey through the gridlock (which, in familiarly epic largesse, spilled indulgently back onto the 101) found me listening to Loveless on repeat and texting my friend Bret with my car in park (and just to completely embody the stereotype, I’ll share that I was between Getty Center and Sunset – nightmare).

Unless you live on the west side, you’ll have to endure some version of this drive to get to Sunny Spot.  When you arrive, you’ll find a classically Venice exercise: peeling turquoise paint on which the name of the restaurant boldly is emblazoned in coral-colored cursive (think the colors of the key at the San Antonio Spurs’ arena circa 2000), a meticulously curated shabby-chic beachside dive aesthetic.  It tries hard not to try hard.

You’ll likely have lost your reservation by the time you arrive (assuming you had the foresight and misplaced optimism to make one).  So you’ll have to wait among aspirant screenwriters and armchair critics; almost impressively basic young women with protein powder-dusted boyfriends following close behind; post-surf stoners, desperately hungry and wondering why they hath forsaken Taco Bell.

It goes without saying that a tiny proportion of guests will be talking to one another.  After all, to our generation, a meal with friends merely means sitting at a table with other people who are also glued to their Instagram feed.  True to form, you’ll see the patrons of the restaurant being alone together, side-by-side but absorbed in Pokémon Go or composing sarcastic YouTube comments or adding this “memory” to their Snapchat story or whatever the intimacy-killer du jour is.

You’ll try and push this depressing portrait of collaborative loneliness out of your head.  You’ll get a greyhound from one of the surprisingly attentive bartenders (you won’t get a Bloody Mary, because they aren’t fantastic here, and you won’t get a mimosa because mimosas are sort of silly).  You’ll steep in the charming, faux-rustic atmosphere of the place, the loose and warm summer shade.  If you’re the type, you’ll lovingly muss your hair and frame a selfie or two.  You’ll wait longer than you should for a table, and do your best not to wonder if it would be easier to get a table at Providence than here.  Then you’ll remember that you should relax; it’s the weekend, and the weekend was made for wasting time.

The Burger
The reason I bring up the 405 and the whole look of Sunny Spot is because I have to talk about them to talk about this burger.

The 405 is not just a freeway.  Well, on the surface it is.  It’s a few lanes arranged in a predetermined path, peppered by ramps every few miles.  But dig deeper, think harder, and you might be surprised with what you realize.  The 405 forces us to confront the ironic truth that, to get somewhere, we have to accept going nowhere for a while.  It wrenches us from the stupefying, swipe-right torrent of instant and meaningless gratification that occupies so much of our time and thought.  It pulls us away from the relentlessly interconnected world and makes us confront our own thoughts.  It demands the one thing so many in this generation lack: patience.

My point is that the 405 isn’t what it seems on the surface, and if you think about it in the right way, you can understand how sitting in traffic actually is a blessing, an opportunity for growth and reflection that has become vanishingly rare as our world becomes a giant touchscreen.  At the very least, it can show you that often times, there’s more to things than what you might see from a cursory look.

Sunny Spot is sort of like the 405 in that way.  If you weren’t looking all that hard, you’d see a beachy Venice restaurant with a gregarious color scheme.  You might miss the subtleties at play here.  Their brunch menu features standard items with haute tweaks.  Grana Padano in an otherwise unremarkable chop salad.  Crisp chicharron on the Cuban pork sandwich.  A sunny egg on the BLTA.

This is a place that quite clearly is trying to give you what you want in a way that’s better than you wanted.  They want to blend the familiar with the high-level.  It’s not just a beachside shack; it’s a place that is dedicated to the marked – if incremental – heightening of tastes.  This is admirable, and an especially tall order when your target audience is so often obsessed with the banal and unchallenging.

What I’m trying to get at here is the (weird, semantic) distinction between being complicated and being complex.  The 405 is complicated because it introduces logistical uncertainty in my life.  Because there are so many damn cars on it, I’m late for any plans that involve me taking the 405.  But the 405 is complex because it makes me feel something every time I’m on it, and exploring those feelings makes me think more deeply and more critically about the world around me and my interaction with it.

Sunny Spot itself is uncomplicated – it’s a simple enough formula of beautiful, precisely disheveled people and a milieu to match; but it’s complex because it seems to be at least attempting to subvert and refine the unsophisticated impulses of the very clientele to which the place – at least aesthetically – caters by subtly altering the familiar.

How does this distinction apply to burgers?  Well, it’s easy to make a burger complicated by fettering it with a slew of features.  But complexity isn’t about the number of variables in play; it’s about the depth of interaction between those variables, and it’s really about the way the thing makes you feel, what it arouses in you when you take a bite.  Sunny Spot rejects being complicated in hopes that it might achieve subtle complexity.

In eschewing all the traditional trappings, Sunny Spot is trying to challenge your preconceptions of what is indispensable on a burger.  Lettuce, tomato, ketchup: these are distractions.  Sunny Spot presents a burger with a spare flavor profile.  By reducing the number of ingredients, the goal seems to be to heighten subtle interactions rather than presenting an amalgam of various flavors.

This burger places two hefty patties smeared with American cheese front and center.  This centerpiece is rounded out with dijonnaise, pickles, and caramelized onions, all of which is sandwiched between two brioche buns.  Note that this hits every one of the basic taste triggers: sour (pickles), sweet (dijonnaise and onions), bitter (onions), salty (beef), and umami (beef and cheese).  This burger touches all the bases without giving too much of anything.

The good news is that this burger is efficiently conceived and executed.  It’s a competent exercise in lean construction.  But that’s all it is: just craft.  This burger clearly wants the diner to do the work of figuring out how these flavors are put together.  That doesn’t stop it from being good.  But it precludes greatness.

A great burger will give you a window into the mind of the person who made it.  It might even arouse memories, feelings, thoughts.  It will show you something or make you feel something.  The best food isn’t that which you can appreciate as a well-formed study in culinary craft.  It’s the food that enriches you somehow, connects with you individually, feels like it was made for you.  This burger will mean the same thing to everyone who eats it.  Few will abhor it, none will yearn for it once it’s gone.  It’s a pleasant, but eminently duplicable, experience.  As far as it goes, it’s great.  The problem is that it just doesn’t go all that far.

In this case, the distinction between complicated and complex is purely academic.  This burger is neither.  Relatively few ingredients interact in predictable, uninspired ways.  The beef and cheese overwhelm the flavor profile.  The brioche is a touch dry.  The dijonnaise and pickles are barely perceptible, so any subtle interaction between them is a whisper in a thunderstorm.  The onions are unevenly distributed on the patty, providing pockets of soupy bittersweetness.  None of this is offensive – in fact, the toppings themselves (especially the dijonnaise, oddly enough) are all quite good – but the ingredients simply stand side by side without ever cohering.  This is an orchestra tuning, not playing a symphony: the talent may be there, but the real show hasn’t started yet.

This burger was not made for you.  It was made for everyone.  It is always correct but never remarkable.  It will be good to everyone and great to no one.  Fairly, you may not care about the fine-grain distinctions between complicated and complex.  In that case, know this: you will neither regret ordering this burger nor crave it again.  But it won’t make you feel anything.  And it certainly won’t make you forget that drive.

Santa Monica, CA 90401imageSanta Monica on a summer weekend truly is an incredible thing.  The beautiful, sun-bronzed masses take to the streets in outfits carefully chosen to reveal the fruits of a winter spent in pilates classes, or of the paleo diet, or of thousands of dollars in Equinox membership fees or CrossFit classes, or of the latest juice cleanse.

 

When Andy Warhol – speaking about Los Angeles – said, “Everybody’s plastic, but I love plastic. I want to be plastic,”  he might have been talking about Santa Monica.  “Plastic” doesn’t have to mean surgically enhanced.  It just means beautiful in a very banal sort of way.  There is an inhuman kind of beauty, a sort of perfection of the human craft, that you see a lot in Santa Monica (as opposed to, say, the intentional, contrived anti-beauty of Silver Lake).  The people there are, for lack of a better term, impossible looking.  Santa Monica is a simple enough cocktail: one part Free People shabby-chic; three parts Stepford; two parts Abercrombie & Fitch catalogue; a dash of pornish, self-aware sexiness; topped with a magnetic superciliousness.

The men want you to think their biceps and abs just happen to look like that.  They don’t want you to know it was Bumble & Bumble that gave them that hair, not catching waves as the sun rose.  The women want to convince you that they don’t think their Chloe is that big a deal – and in some cases, unbenknownst to them, it’s not – when in point of fact, it’s the centerpiece of their whole outfit.  It’s all about appearances.  Style trumps substance.  Sizzle trumps steak.

Another invective against poor Santa Monica.  But in my defense, my path to getting the burger at 1212 (a new-ish, trendy-ish, rustic but also modern, accessible but also fancy – aspirationally on both counts, by the way – small plates kinda, presentation-first installation on the Third Street Promenade) was blocked by hordes of these saunteringly basic sort.  They cross the street with such languid entitlement that, when the light changes and they become jaywalkers, their pace seems actually so slow.

So, if you decide to go to 1212, be warned: it may take you forty minutes to round one block to make a right turn into a parking lot (the left turn lane was blocked off without explanation by the Santa Monica Police Department, which spends most of its time making operating a motor vehicle in the city slightly less palatable than listening to him read this aloud, while you are made to watch the last forty-five minutes of this with no sound).  And if that was not enough, you then must navigate crowds of people so basic their pH is 15.

After all that – finally – you’ll get to 1212, and hope that the burger – for which you endured such tribulations – will be worth it.  You hope so hard.  I met Kelsey and Kate there.  After the ladies were done declining to dance with a gentleman who looked like a housing-insecure Colonel Mustard, we shared a meal.

The Order: The Burger

The Burger
They certainly don’t want for effort at 1212.  This burger comes topped with black truffle gouda (really), bacon jam (really), a sunny side up egg on a sad ciabatta.  The patty is…well, who knows what kind of beef.  It doesn’t matter, right?  See how much other fancy stuff is on there?  Seriously, the beef is the weakest point of the burger.  The server recommended it cooked medium, which as a general matter, puts me on notice that the flavor of the beef is nothing to write home about.  This held true here.  The patty was bland and gritty, with only the stinging bitterness of char on the front end to confer any personality at all.

The “black truffle” gouda was similarly disappointing.  I put black truffle in quotations earlier because you’ll have to take their word for there being any black truffle at all in that cheese.  If you’re into this kind of thing, you know black truffles are in season, and you might be getting excited at the prospect of some sort of infusion or suspension or what have you.  Get over that.  This is gouda cheese.  There is no truffle to speak of.  There is not even the suggestion of truffle.  The cheese itself tastes fine, but it’s just gouda; the representation of it as something more is mendacious culinary clickbait, and it’s mildly infuriating.  What you’ll get is pedestrian, relatively blunt, pleasantly nutty and reasonably buttery gouda.  Nothing less, but definitely nothing more.

Beneath the bubbling blanket of gouda lies the bacon jam.  It’s more of a chutney than a jam – it’s too tangy to be a jam.  It’s got a strange ragu-like consistency.  It’s oddly sharp and almost sour, and is a reasonably unpleasant add-on.  It clashes with every other ingredient, especially the cheese, and ultimately feels like a try-hard feature that should have been excluded.

Then, there’s the sunny egg.  The egg itself is good enough, runny, smooth and soothing both in taste and texture.  It somehow manages to be the best thing about this burger and feel like surplusage at the same time.  Amid all the flavor noise, the textural complexity the egg adds another layer of confusion to each bite, which the burger lacks the theoretical or actual vitality to support.

The Burger at 1212 is a product of its environment.  It cares more about sounding good and looking good than it does about actually being good.  It’s ingredients are all fine, but none are particularly thoughtful.  It seems like a burger the chef imagines other chefs dream of serving (you know, a Cultured but Familiar Spin on a Classic), but it’s delicious in the same way the Beautiful People in Santa Monica are beautiful.  Each feature is well-appointed (I guess), but there’s an artificiality to the whole, a lack of genuineness that is facially annoying, but ultimately unsatisfying (at best) or downright repulsive (at worst).  Much like driving in Santa Monica on a Saturday, this burger is best avoided.

Oh, but the kale chips were pretty good.

Sunday was a difficult day.  Not in the sense that it was a strenuous day.  Just because it reminded me of the tortured relationship I maintain with Venice.

When I lived on the East Coast, Venice pretty nearly captured everything I missed about home.  The sun’s rays so bright you swear you can see resplendent gold blades against the implausibly blue sky.  The heat of those rays on your skin tempered by the ocean breeze.  The way that breeze that picks up and swirls stray grains of sand.  The way that sand manages to get between your toes, even when you’ve worn shoes.   The seemingly anti-gravitational lean of palm trees in the briny air.  All the beautiful people walking down sidewalks peering into the windows of high-end boutiques, passing through the aromatic clouds drifting up and over from food trucks idling on the blacktop.

And speaking of food,  Venice has long been a culinary center in Los Angeles.  The Tasting Kitchen and Gjelina, by now, are old news (but still newsworthy).  More recently, veteran culinary icons (Josiah Citrin) and young upstarts (Top Chef winner Nyesha Arrington) have laid down roots there as well.

The TL;DR version of all that is that there’s a lot to love in Venice: weather, sunshine, the beach, and delicious food.  For a time, I was dead-set on living in Venice upon returning to Los Angeles.

After that drooling paean, what, you ask, makes my relationship with Venice “tortured?”

Because, before eating a quite-good brunch at the charming Dudley Market, you have to proceed through a gauntlet of challenges that Venice lays before all those who come to share in its beachside bounty.  First, you have to park.  Basically, that amounts to crawling through labyrinthine side streets and alleys, doing your damndest to not commit a tort against one of the actually psychotic cyclists swerving in and out of your path.  As you do, you’ll be flanked on one side by side streets running perpendicular to you, all packed with cars, and on the other side by totally vacant beachside lots charging a cash-only $20 flat rate – a rate that frugality and mulish pride won’t let you pay.

Then you get out of your car (after displaying an embarrassing lack of parallel parking acumen for a crowd of dead-eyed, unwashed, and dreadlocked white people), and you’re forced to really see Venice.  Sun-bronzed hippies, carelessly half-naked, leaning against the walls of grubby and overpriced apartment buildings, weirdly unaffected by the strange funk the beach breeze carries from nearby dumpsters.  Hungover bros speeding down those alleys in their fathers’ leased Teslas.  Bottle blondes in garish $600 sunglasses from last season, oozing a petulant, practiced apathy through bar-battered bangs.  Tourists, drenched in sweat and marveling at the spectacle of all these disparate demographics coexisting seamlessly.  And even if you’re a native, you’ll find yourself marveling at it too.  It’s staggering, stereotypically Californian, and a little gross.

But Venice is like an old friend.  She may occasionally annoy or disgust, but it doesn’t take much to remind you of why you love her and are lucky to have her around.  As pissed as I was about parking, and about feeling like a millennial Frogger dodging $100,000 electric cars, it all melted away when I felt that breeze come in off the Pacific .  Any residual impatience was obliterated when I took the first sip of Dudley Market’s stellar espresso milkshake with the beach at my back.

I didn’t go for the milkshake, of course.  Kelsey and I stopped in at Jesse Barber’s new spot to try the Burger Diane.

The Order: Burger Diane (beef/pork patty,  gruyere, melted onions, greens, dijon, mushroom, and pickles on sourdough hybrid).

You might ask yourself, “Why is it called a Burger Diane?”  It’s likely a play on steak Diane, which is a filet mignon in a mushroom and Dijon mustard-based sauce (there’s more to it than that, like heavy cream and brandy or something, I think; but this isn’t Delmonico’s and I’m not Emeril Lagasse).

The Price: $16 (before tax)

The Burger
Jesse Barber worked at Barnyard before, and it shows.  Dudley Market emphasizes the use of high quality, local, seasonal ingredients above haute-cuisine technique.  The espresso milkshake features housemade ice cream, which gets its high protein content from the biodynamic duck eggs (from Moorpark) they use to make it.  The greens that flanked our burger (some also made their way onto it, actually) were obsessively fresh, drizzled only in lemon juice and oil.  The bacon is from a pig that was butchered less than a week ago in-shop.  It’s all very L.A.

The burger is built around a patty that is about 60% beef and 40% bacon.  It’s cooked just barely on the rare side of medium (there’s no pink). My worry was that the beef would be overcooked to ensure the pork was cooked through, which would give rise to a dry patty  with very little personality on the front end, with pork fat and salt dominating the finish.

My worries were misplaced.  The beef was cooked through but still juicy, and the pork was subtle, adding salty complexity without overwhelming things.  I did not leave Dudley Market convinced that the hybrid patty is a better approach than just cooking an all-beef patty medium rare and putting bacon on top of it, but I am convinced that I was wrong to think you can’t build a good burger around a hybrid patty.  You can.  Barber has.

The bun is what our server called a “sourdough hybrid,” grilled and pressed into flat discs, dusted with poppy seeds and salt flakes.  The crust is buttery and crisp, while the inside maintains the unmistakable just-dry-enough sponginess of sourdough.

The highlight of this burger, though – even more than the estimable patty – was the interplay between the gruyere cheese and the mushrooms.  The gruyere is sweet and nutty, tangling nicely with meaty, bold mushroom.  The pairing is formidable, and it hits hard early.  Less than halfway through the first bite, these two ingredients alone make it clear that this burger is not for the faint of heart.

The cheese and mushrooms are an earthy, complex overture to the surprisingly graceful and tasteful mash-up of beef and bacon that follows.  Just as the savor reaches its climax – at the moment when it’s all about to get a bit too “forest floor and barnyard gore” for good taste – the pickles emerge as if out of nowhere, bright but not too briny, offering a little kick of acid to clean everything up, the ideal prelude to the sweet, mustardy finish.

Only the melted onions, cooked even past the point of caramelized sweetness, seem superfluous; they lurk like emo kids at lunch, hidden from the rest of the flavor profile.  That’s a disappointing but hardly damning flaw in an otherwise superb preparation, as well-balanced as it is creative.

I guess Dudley Market is kind of a microcosm of Venice itself: There are aggravations – notably, slow service and steep prices – but on balance, there are more reasons to return than to stay away (but order with care, as the menu decidedly is not uniformly inspiring; the speck with burrata and balsamic was simple and arresting despite the absence of the advertised poached apple, but the crab louie was little more than an incoherent jumble of pleasant things).

Yes, you’ll need to budget a bit of time for your meal; this place isn’t exactly run with German efficiency (though if you have an enchanting companion and an espresso milkshake to keep you company while you wait, you won’t mind the wait so much).  And yes, the burger specifically – and Dudley Market more generally – is as overpriced as the surrounding real estate.  But unlike the surrounding real estate, there’s more to Dudley Market than a nice view and convenient beach access.    So stop in and try this burger.  Consider it one more reminder why you love Venice in spite of the fact that it’s so…Venice.

Stout

Alexandros Kagianaris and Charles Lew are pretty serious about casual dining. They envision neighborhood joint Stout as being a place where – to quote their website – “club goers meet the culinary elite for burgers and beer.” Leaving aside the fact that I’m not sure who fits into either of those groups, the thrust seems to be that they’re aiming to appeal to a broad swath of people. It’s one of those restaurants that’s trying to please foodies and philistines alike. They do it by using high-quality beef, and assembling burgers with interesting (but not too challenging) toppings.

Regardless, Stout has received its fair share of accolades. L.A. Weekly called its eponymous burger the ninth best burger in Los Angeles. And if there’s one thing we know, it’s that ninth is the new first. Anyhow, Stout has three locations: Hollywood (on Cahuenga), Studio City (on Ventura), and Santa Monica (on Santa Monica).

McKenna and I went to Stout’s Studio City location to put its bona fides to the test. Our trip was not without adventure: She got a burger with an over-easy egg on it; as she picked it up, the yolk split and spilled out of the bun like lava over the rim of a volcano, completely drenching her hands. It bears mentioning that she survived the explosion and took down the burger like a champ (even if it meant having hands so covered in yolk and sauce that she had to drink her beer through a straw. Which she did. Also like a champ).

For her trouble – or maybe just for her scintillating personality – our server really took quite a shining to McKenna (probably because she didn’t hear all the shit McKenna was talking about the evening’s playlist). They bonded over the course of the night, not always (albeit quite often) at my expense. But a dose of well-intentioned derision is a small price to pay for seeing someone’s hands coated in egg yolks like a vegan’s ideation of Jack the Ripper.

I’m digressing. The TL;DR version is that we went and ate burgers. One exploded. Beer was sipped through a straw.

The Place

The Burger
Let’s get this out of the way: I don’t know why they call it the Imperialist. I’m also fully aware that I didn’t eat the flagship burger at Stout, the one for which it earned such acclaim. Obviously, I will be back to Stout for its namesake burger, but I was jonesing for something a bit on the subtler end. So obviously, I ordered a burger called the Imperialist.

Like I said, I don’t know why the call it that. But I have an idea. I think it’s because they took a perfectly good, perfectly functional, perfectly traditional ingredient combination – cheddar, ketchup, and mustard – and invaded that tranquil space with some weird newfangled addition. Listen, roasted tomato is a dicey proposition in any context. Put it all up in the shit of a classic burger, and it’s just invasive (not to mention arbitrary).

It was aggressively smoky and then concentratedly sweet. The ferocious – almost saccharine – back-end of the tomato bled into the ketchup, brought out the sweetness of the (excellent) bun, and really accented the notes of fruit in the cheddar (simultaneously blunting its acidic and nutty quality), making a sunburnt sweetness the dominant element of the early part of every bite.

Both McKenna and I noticed that the patty was a little dry. This probably had something to do with the fact that it was coarse and loosely packed, which gave the meat’s juices room to escape. The bottom of the patty was coated in mustard relish, a weird but very pungent sauce that pretty much overwhelmed the finish of every bite.

My brown person bias maybe coming into play here, but I’ve never been a fan of imperialism. One of my friends – who shall remain nameless and blameless – argues that imperialism gave the backward masses of the developing world a sense for administrative efficiency and built us roads and rail (mind you, he’s 84% joking when he says shit like that). Be that as it may, I think the colonial footprint is a harmful one. Stout’s Imperialist, sadly, is no more successful.

LABP x PHL: Village Whiskey

It is conceivable that, if there is a heaven, it resembles Village Whiskey.

I’m hesitant to wax theological here; that’s a horrendously fraught enterprise, and I doubt many of you would like what I had to say. To be clear, though, I’m not saying Village Whiskey is necessarily a perfect place. But it does have a lot of the trappings of a perfect place: a robust, whiskey-focused drink selection; a menu composed by a talented chef, José Garces (the centerpiece of which is a burger); and a vibrant, friendly atmosphere that is the perfect complement to good company. And milkshakes. It’s hard to imagine heaven without milkshakes.

This is a restaurant that is proud of its burger. I went with Kevin, Rumi, and Alexis to see if that pride is misplaced. It was a busy evening: I took selfies with two random girls for them to send to their friends on Snapchat. Alexis broke a glass in rage because she drinks slowly. And between the two of them, Kevin and Rumi can’t match my check-paying skills and sneakiness. And we ate.

The Burger
The patty is eight ounces of farm-raised Maine Angus beef, impressively juicy and roughly packed into a small puck. It’s got the hallmark structural imperfection and asymmetry of a patty that was assembled by hand. The cheddar forms a nutty glaze over the top of the beef, bleeding over the sides and into the natural crannies in the patty. The patty is balanced atop thin blades of avocado. Beams of bacon shoot out the sides of the burger like exposed girders. Anchoring it all is a slice of tomato and a couple leaves of Bibb lettuce and a thin drizzle of Thousand Island.

The customizable burger is a tricky endeavor, and it’s hard to know how to evaluate it. After all, it leaves a lot in the hands of the consumer (and therefore, out of the hands of the chef). On the other hand, it places the onus on the restaurant to provide a burger of consistent quality no matter what ingredients they’re given. Oftentimes, diners don’t know how to thoughtfully assemble ingredients and instead opt to just choose a bunch of stuff they like. By offering a relatively diverse and challenging selection of additions, Village Whiskey places a lot of trust in their customers and their kitchen staff to make everything work.

It’s nice that as a fallback, the default garnishes are limited and fresh, the Thousand Island is unobtrusive and a mostly textural element, and the beef is very precisely cooked. This sets up a strong foundation upon which the other ingredients can interact more comfortably. My selection was relatively uncomplicated, with the bacon-avocado combination doing the heavy lifting. The smokiness of the bacon was mellowed nicely by the creamy avocado. Lurking under it all, the caramelized onions were sweet and tangy, harmonizing nicely with the Thousand Island.

So yes, this is a well-balanced burger, and it’s also pretty big — but you pay for it. At $22.50, it’s one of the most expensive burgers I’ve yet eaten. Candidly, it doesn’t completely live up to its price tag, but it’s still pretty good and really satisfying (I came medium hungry and didn’t even come close to finishing this monster). And as expensive as it is, I’d recommend it. My advice: round out the experience with some duck fat fries and a whiskey cocktail (or two), then finish with a vanilla bourbon milkshake. It’ll run you quite a few bucks, but you’ll leave full, happy, and maybe even a little buzzed.

Ox & Son

IMG_3290Admittedly, I’ve been pretty tough on Santa Monica. But dammit, when this many places are ripping off Father’s Office, it’s kind of hard not to talk a little shit. Anyway, Ox & Son is another Bradley Miller spot. The name is a sentimental tip of the cap to his dad Gary (a butcher nicknamed “Ox”) who taught young Brad to dismember animals before the lad was old enough to drive. Which is, well, you know.

Anyway, Ox & Son is one of an ever-swelling multitude of farm-to-table spots in Santa Monica (and Los Angeles more generally, actually). The menu is adventurous but hit or miss. The yellowtail crudo is worth a second look. The sticky pig cheeks are insipid. But the burger gets a fair amount of love from the locals.

I feel like I say that – “the locals love it!” – every time I write about a burger I eat in Santa Monica. And I think part of that has to do with the love affair that people who live in Santa Monica have with Santa Monica. While I appreciate how lovely it is to love where you live, there’s a whole city out there, y’all. And I promise you, it’s awesome. You should, like, go to Hollywood sometime. They have burgers there too. Some of them don’t mismanage arugula.

But anyway. I’ll spare you another trip down that particular rabbit hole – nobody needs me getting all self-righteously analytical about Santa Monica again. Let’s talk about this burger. We celebrated twenty-some years of Tessa with Scott, Kevin, Deb, Silva, Shant, and (eventually) Greg. I took the opportunity to try out a new burger.

The Place
Ox & Son

The Order: O&S Burger

The Price: $20 (before tax)

The Burger
I don’t know, y’all. Part of me feels like a hater. But this is another Santa Monica burger at a new-ish Santa Monica restaurant that presents as original a burger with fancy cheese (raclette here, which is a smooth, creamy number you might have encountered if you’ve ever eaten fondue), arugula, and caramelized onions. Like, honestly, we’ve all been to Father’s Office. We get it. That burger is popular. Now make something of your own.

The O&S Burger, then, is ultimately little more than an overpriced facsimile of what they make at Father’s Office. The patty is a chuck/short rib mix made with beef from the Central Coast (they wouldn’t get more specific than that). It’s tender and reasonably flavorful, but at $20, it damn well better be. The raclette is a distraction. It’s like someone spilled fondue on your burger. The result is a messy, overpowering cheese presence. Raclette is a weird choice, honestly. It’s melty but doesn’t give much in the way of distinctive flavor. It doesn’t meld well with the beef, which means the gooey shitshow decidedly is not worth it.

The arugula is there. And it’s arugula. And it’s on a burger. And given that Ox & Son is like the fourth restaurant in its zip code to put arugula on a burger and then drop the mic, it’s no longer surprising or praiseworthy; it’s now a meme. It’s got a bitter, peppery snap to it. It was fresh enough not to bother, but wilted a little in the pit of hot raclette quicksand in which it was embedded. The onions were zeroes on the palate. I couldn’t tell you anything about them. The truffle aioli sounds way better than it is – gasping notes of truffle submerged beneath a tsunami of mayonnaise. It’s the best, most original idea on the burger, but the execution honestly is kind of ham-fisted.

Most people can’t really articulate what makes Father’s Office so good. They like it because it’s the best burger many people know about in Santa Monica. Because overzealous and pretentious foodies gushed about it on Yelp. But the reason Father’s Office is good is because they took risks with skill. They were the first to incorporate arugula in a serious way. They took a different approach to patty construction. They use rolls instead of buns.

But all that stuff is kind of beside the point. The reason Father’s Office is good is because their risks are all calculated. They are purposeful in their deviations. I got the impression that the folks at Ox & Son realized, “Oh shit, this burger might be too similar to the Father’s Office burger, mightn’t it?” In response, they used a meltier cheese and tweaked the aioli a bit. In the main, that’s not enough of a change to fool anyone who’s paying a scintilla of attention. But more to the point, it compromised the burger. The raclette masked the flavor of the beef. The aioli went to war with the arugula, and in that fog of war, the onions got lost.

Ox & Son undoubtedly is vying for the crown of Best Burger in Santa Monica. Unfortunately, they aren’t even really presenting serious competition for the crown of Best Burger on Montana Avenue.

Ashland Hill

IMG_3219Two things will occur to you immediately when you walk into Ashland Hill. First, you likely will think something to the effect of, “How am I going to get a seat at this place?” Seating at Ashland Hill approaches Father’s Official levels of maddening awkwardness. After hovering like a stalker for twenty to thirty minutes around a group of hipster-y, Venice-y surf nerds (who, parenthetically, are engaging in a troubling amount of PDA), you eventually notice another group of people get up, and you bolt over to grab their vacated table like it’s the golden snitch.

The next thing you note is a mural over the far end of the patio. It appears to be Humphrey Bogart and Lauren Bacall. Next to Humphrey and Lauren is a Raymond Chandler quote: “It seemed like a nice neighborhood to have bad habits in.” Egregious hanging prepositions aside (Shame on you, Ray; and shame on you, Ashland Hill, for memorializing such deviant grammatical practices on your walls), it isn’t immediately (or subsequently) clear whether that’s a tip of the cap to Santa Monica, or an oblique indication that going to Ashland Hill is the brand of bad habit to which Santa Monica is so happily conducive. But I guess that’s neither here nor there.

Otherwise, Bradley Miller’s spot is pretty much what you’d expect. It’s appropriately trendy for a beer garden located in that soft space where Santa Monica starts to melt into Venice. The hostess is sweet but superfluous (she doesn’t seat you; she merely explains the fact that sitting and eating at that restaurant is a logistical clustercuss). The service is competent and unobtrusive. The food comes out fast. The staff are friendly enough that you have a perfectly pleasant experience, but not so friendly as to allow you to forget that they’re way cooler than you. The clientele oozes practiced quirkiness.

Regardless of all that ballyhoo, this much is certain: There are many places in Santa Monica the Project is slated to try. Ashland Hill generated more excitement among the locals than most of them. So on Wolf’s last night in town, he, Alexandra, Rumi, Megan, and I went to see what all the fuss was about.

The Burger
It seems pretty clear that Ashland Hill was looking to do something a bit different here. There are a lot of singular flavors here, and they interact in novel ways. The best way to understand it, I think, will be for me to describe the individual pieces, and then talk about one interaction that stuck with me.

First, there’s the meat. Ashland Hill employs a strange pressing technique. I don’t know what it is, but the patty is texturally and structurally distinct from any other burger I’ve ever had. In the first place, it’s coarse. But more notably (and kind of relatedly, actually), the patty seems to fall apart – not melt, but actually crumble – as you eat it. And that seems intentional.

It’s weird, but it works. You bite into the burger, and the patty kind of fragments in your mouth as you eat. It’s very strange, but it also exposes a larger surface area of meat to your mouth, which can never be a bad thing. The result? You really taste the beef, even through all the other ingredients. The patty is topped with a thick melted slab of what is advertised as sharp white cheddar cheese (but which is, in point of fact, quite mild-mannered indeed), and it sits atop a bed of cool watercress, leafy and distantly peppery.

Next, there is the paprika aioli. It is a bright, burnt orange, adding a nice burst of color. The sunny, dusty, spicy flavor of paprika is very present, even through the eggy base of the sauce. Though it isn’t half bad, the aioli is probably the most confusing part of the burger, if I’m being honest. But more on that in a hot minute.

I suspect Ashland Hill is proudest of the bacon and red onion jam that coats the patty (or they should be). It’s titanic. Chunks of bacon and onion hang suspended in a sweet, vaguely fruity matrix. Internally, this jam plays on the sweet-savory contrast, and serves a similar role within the context of the entire burger (on balance it’s sweet, so in its capacity as a topping, it complements the other savory components). It also adds an interesting textural subtlety to the burger.

Yeah, this is some rococo shit.

By far the most important interaction in the burger is that between the jam and the aioli. While I’m hesitant to call it a flaw, I conclusively can say the decision to include both didn’t make a ton of sense to me. The flavors butted heads, because the paprika couldn’t coexist peacefully with the sweet little ropes of onion or the bricks of bacon. It’s not entirely clear why the aioli needed to be a paprika aioli as opposed to…anything else.

Using multiple sauces – or sauce analogues, like jams or relishes – is a risky proposition. It demands careful balancing and perfect proportioning. While the sauces on this burger seem to have been conceived really carefully, it’s less clear that the decision to put them together was as well thought-out. Ultimately, they get in each others’ way. For my money, I’d ditch the aioli altogether. Luckily, that’s an option; modifications are welcome, and they’ll happily hold the aioli.

That minor balancing gripe aside, this is a good burger. The beef is good and well-assembled. The ingredients are fresh and well prepared. The bun is eggy, rich, and hardy. It holds up well to the substantial slab of meat it’s tasked to contain, and supplies its share of flavor without being too intrusive. The only other complaint, then, is that it’s really expensive. At seventeen bucks, it’ll put a dent in your wallet. That said, it’s a huge meal. I came hungry and ate half of mine (for reference, Wolf came feeling normal and demolished his inside of ten minutes. For further reference, he’s very manly and I am less manly). And it comes with (decent but thoroughly uninspiring) herb and parmesan fries. So it’s expensive, but not utterly unjustifiable.

All told, if you don’t mind braving the seating nightmare, taking the financial hit, and holding the aioli, Ashland Hill has a pretty good, if slightly baroque, burger for you.
