Dip your toe into the internet musings about Meatzilla, and you likely will find yourself annoyed.  The exclamatory nomenclature.  The burger with a pepperoni pizza bun.  The unshakable feeling that everything about the place was conceived with a smirk.  Indeed, even without the deviant punctuation, the name itself is really an etude in hipster snark. There’s very little in the reportage about this place that would inspire any reasonable person to take it seriously.

Most of this stuff had escaped me when DJ, a partner in my office, told me he had it on good authority that Meatzilla made the best burger in Downtown Los Angeles.  Now, having waxed adoring on a different downtown burger myself, I felt predictably compelled to investigate.  So I headed over to Meatzilla with Bret and Greg.  It’s a shack on Main Street, a pretty barebones affair, with a cramped kitchen, a whiteboard menu, stacks of soda boxes filling a side doorway, and a playlist like a Tarantino soundtrack. If they’re trying to project the image of hustling newcomers just trying to make it, it’s coming off gangbusters.  Think Steinbeck repurposed for the Snapchat generation.  Okay, that might be overstating the point a bit, but you get the idea.

The Order: Beef! Beef!

The Burger
The whole concept of the place may seem tongue-in-cheek and affected, but the fare on offer is far from it.  While there are some experimental items on the menu to be sure, Meatzilla is conceptually a purist’s burger joint, whose bread and butter is no-frills, beef-forward presentations redolent more of summer cookout than a hipster Thanksgiving.

The Beef! Beef!, for instance, features two absolutely mammoth patties with discs of housemade pickles about the diameter of a nickel laid sporadically on top, along with tangy white onion.  A thick primordial ooze of cheese – Muenster on one patty and American on the other – drips from the meat.  You might mistake it for a runny fried egg (which you can add, by the way, for a buck fifty).  A generous – but not excessive – helping of Sriracha ketchup films both buns.  And that’s it.  No lettuce, no tomato, none of the other standard garnishes.

The beef is flavorful and surprisingly not overwhelming.  It was a hair overcooked, and while that normally wouldn’t be an issue, when there’s this much beef, there’s a smaller margin for error.  The pickles were utterly exceptional though, perfectly sour and with a healthy snap to them.  The onions were similarly well integrated, soaked in ketchup, and smartly kept raw to add more crunch and tang to complement the massive amounts of beef.  The ketchup was not overpowering, offering a nice sweet-hot undertone to each bite without being too assertive.  The cheese was a coup: gooey, rich, and indulgent, it gave every bite a sumptuous, smooth warmth.

All these garnishes, though, were just complementary though.  While Burgerlords and In-N-Out seek to harmonize all the ingredients into a coherent, synthesized whole in which all the components cooperate to create something larger than the sum of its parts, Meatzilla is, true to its name, a beef-first and beef-last kind of enterprise.  If, at Burgerlords, the burger is an orchestra in which the meat is just one instrument, at Meatzilla, the beef is the soloist, with other instruments there to add color and texture, but never to command your attention.

So is this the best burger in Los Angeles?  I guess that depends.  This burger is not a work of art.  But I left my meal with a pretty clear understanding of why someone might fall in love with it.  If you think a burger should be an unapologetically beef-focused dish, Meatzilla will appeal to you.  They’re about beef.  Not about buns (though the bun holds up impressively here, even if it isn’t the most dynamic component of the burger), or garnishes, or balance, or anything else.  But beef.

What’s more, there’s a sentimentality inherent in this dish.  Meatzilla has the sort of unbalanced charm that will take you back to the backyard cookouts with friends you only distantly remember from a washed-out photograph.  The smell of the grill would waft over and intermix with the harsh scent of chlorinated water.  It’s the burger you ate before you cared that soda was bad for you.  It’s the burger you ate before you started obsessing over calorie counts and carbohydrates.  It’s the burger that would buckle a paper plate.  It’s the burger you ate before you became a well-heeled culinary connoisseur and forgot how to enjoy something unsophisticated.  It’s the burger you ate when you cared more that your food was fun rather than an immaculately curated art project, when it didn’t matter if a dish wasn’t a perfectly manicured harmony of flavors and textures.

The last word is that while it’s hard for me to say this is downtown’s best burger, it’s hard to argue it isn’t either.  It’s a strange, unsettled feeling I left with, but it’s a feeling that is pulling me back to Meatzilla for another visit.  Which, at bottom, is all that matters, I guess.

You may remember The Habit made waves a couple years back.  Playing the role of dark horse to perfection, the Santa Barbara-based West Coast mainstay placed first in Consumer Reports’ fast-food survey, beating out other local heroes like In-N-Out (spoiler alert: that’s unvarnished sacrilege), and larger outlets like Steak ‘n Shake and Smashburger.

Now obviously, it’s far from clear that you, I, or anyone else should trust or defer to the culinary preferences of people who only got a say because they subscribe to Consumer Reports (like, consider how many people you know who subscribe to Consumer Reports).  Having said that, the people surveyed ate almost 100,000 meals between them.  So if nothing else, there’s a good amount of data behind this survey.

For a burger chain you’ve probably never heard of, the Habit is quite an old mainstay.  It was founded in 1969, and has since steadily expanded throughout California, creeping into Arizona and Utah as well.  It migrated east into New Jersey recently too, but it’s still definitely a child of the West.  With thanks to Juno for making it possible, Bret and I took five from work to grab this old standard for lunch.

The Order: Double Charburger with Cheese

The Burger
For such a well-established outfit, The Habit certainly has escaped widespread attention or acclaim.  That might have something to do with its sort of silly branding (their truck invites you to “Get up in [their] grill” – see what they did there?), or the fact that it just sort of feels like a shoddy fast casual restaurant.

Far from the heaven-white, spit-shined gleam of an In-N-Out burger, the hidden gem illicitness of a Burgerlords, or even the ruddy and unvarnished appeal of the Oinkster, The Habit’s brick and mortar spots have all the charm of, like, a T.G.I. Friday’s.  You’ll find them nestled in shopping blocks, flanked by, say, a Nordstrom Rack and HomeGoods.  It’s almost impossible to take seriously, especially for a well-heeled foodie type.  One expects servers with pique polos covered in buttons, fried onions fashioned into crisp flowers, seafood from oceans unknown, and steaks whose origin is impossible to discern.

At first blush, you might be struck by what feels like a too-expansive menu, replete with salads nobody ought ever order, an odd albacore sandwich that is just strange enough to intrigue (but not intriguing enough to order), and some curious sides (tempura green beans, anyone?).  While it’s probably true that the menu would benefit from a good editorial trim, there is enough weirdness on this menu to suggest an undercurrent of sophisticated curiosity that might make this burger worth trying.

Readily, I will admit my anticipatory scorn was building heavily as I approached this burger.  In a swell of self-congratulatory elitism, I prepared to dismiss the Consumer Reports survey result as just some sampling tomfoolery, reflecting the unsophisticated preferences of some culinary neophytes who lack the time, mind, or means to frequent the truly good restaurants.

Sadly, this is not (entirely) a redemption narrative.  I was undoubtedly being unfair (and a big jerk) in my preconceptions about The Habit.  That survey was, after all, just a survey about fast food.  But in aid of crystalline clarity, let me state this unequivocally: this is not the best burger – fast food or otherwise – in this city, let alone the country.  It is, however, a well (not perfectly) executed Californian classic, certainly much better than you might expect from the kitschy look of the place.

Envision a slightly heftier, meatier iteration of the (still comfortably superior) Double-Double with a worse bun, and you’re in the Habit’s airspace.  The bun is a simple white bread bun with the lightest kiss of sweetness.  It was slightly dry but adsorbent enough to keep things from getting messy.  The lettuce was  shredded, flirting with the mayonnaise and the pickles hidden below, creating a piquant and crisp cushion to anchor the whole flavor profile of the burger.  The tomato wasn’t exactly market-fresh, but gave a juicy enough punch.  The caramelized onions were a nice touch, sweet and sharp on the tongue without being too soupy (though they were a bit stringy and hard to eat).

The Habit distinguishes itself – for better or worse  – in the size of the patties.  They are massive crisped discs of beef, with slabs of melted cheese draped over them like fire blankets.  They are big enough to decisively take center stage in the flavor profile of this burger without completely drowning out the other ingredients.  True to the burger’s name, they have a solid char, which gives a distant savory bitterness to the front-end of every bite.  Sadly, they’re also a bit overcooked, which dries them out a fair amount.  What the patties bring to the table in flavor, then, is sort of ruined by their textural deficiencies.  And given their sheer size, these faults are tough to ignore, and aren’t really balanced by the burger’s other virtues.

Having said all that, I can understand why the Habit would have gotten itself something of a following.  It’s an undeniably excellent deal at the price point – value-wise, it definitely falls in the same category as In-N-Out.  And it probably deserves to be slotted in with that class of burgers that are “slightly better than fast food” but “not really gourmet.”  And it handily beat out my elitist preconceptions.  But you should quickly disabuse yourself of the notion that the Habit can lay a finger to In-N-Out.  I have mulled over that result for a good long time, and have come no closer to a colorable explanation for it.  But the fact remains that while I may never understand how the Habit beats out In-N-Out in the minds of the Consumer Reports readership, it isn’t difficult to understand the restaurant’s appeal.  It may be overblown, but it isn’t undeserved.

Haché

Depending on your affinity for the classics, you may have heard about Desert Trip, a music festival at the Empire Polo Club in Indio (home also to the Coachella Valley Music & Arts Festival).  Unlike conventional festivals, Desert Trip offered a lean lineup of classic rock luminaries: The Rolling Stones, Bob Dylan, Paul McCartney, Neil Young, Roger Waters, and The Who.  No industry neophytes here to soundtrack day-drinking; this was a headliners-only affair.

Almost immediately, this festival drew the derision of sneering millennials, likely still coming down from a tour in the Sahara Tent at Coachella (you know, artistically discerning social critics like these).  They called Desert Trip “Oldchella,” an incisive, hyper-literate critique of the low-energy sort who enjoys music festivals that feature musical instruments instead of computers vomiting out spleen-rupturing bass.

It’s tempting to conclude that there is a youthful condescension among our generation toward anything we regard as a relic of the past, a sort of reflexive regard for modernity, a respect based on nothing but the fact that a thing emerged from the sea of narcissistic home recorders and YouTube amateurs to seize some measure of notoriety.  That view maximizes convenience, but we often fail to see its fundamental flaws, fail to recognize that not all good things go viral, and not all things that go viral are good.

I have neither the time nor mind to attempt to unpack what animates this elevation of new over old, but I’m no less convinced that it exists.  I also wonder if that’s the reason people feel the need to present Haché as something that it isn’t.  See, if you are inclined to poke around Google prior to going to Haché, you might be misled.  Internet commentators have woven a web of half-truths about this place, for whatever reason. It’s not a dive; it’s rustic, they say.  It’s a French-inspired and bistroesque, they say.  They serve steak sandwiches, they say.  Don’t call them burgers, they say.

You’ll note, once you arrive and have ordered, that the above statements range from “pretty” to “categorically” wrong.  It is a dive.  There is nearly nothing in the cramped patio and sticky high-tops that is redolent of the breezy bistro you might have imagined.  The mesh window at which you order,and the t-shirt clad hipster that brings you your burger don’t evoke a Parisian bistro where sighing poets scribble elegies as much as a Bostonian Irish pub where townies punch out graduate students.

By the looks of it, this is a place you’ve been a hundred times before.  This is your dad’s dive bar.  There is no real attempt at novelty here.  This is Desert Trip, not the Sahara Tent.  It is more Steve Miller than Steve Aoki.  You get the point.  Regardless, Haché has been on my radar for a while.  Finally after much cajoling – guilting? – from my dear friend Greg, I met him, Bret and Alex there to try a burger.  Or a haché.  Or a steak sandwich.  Or whatever you might want to call it.

 

 

The Order: Karma Burger

The Burger
Whatever Haché isn’t, it is, in many ways, essentially Silver Lake.  There is a winsome haggardness to the place.  You walk in feeling as though you have stumbled into the middle of a carefully structured, meticulously curated collapse.  A middle-aged man in a quarter-zip fleece sits near the corner, his beer barely dented, half-heartedly watching the Seahawks lose.  A young man with an undercut checks his phone compulsively, casting the occasional furtive glance doorward to see if whoever is meeting him has arrived yet.

The thought might occur to you that this is the least affected crowd that has ever gathered on Sunset Boulevard.  And sure, that may have something to do with the fact that it’s a rainy Sunday in Los Angeles, but it felt appropriate for this place.  There’s an agelessly genuine quality to Haché.  It’s not a place out of time, it’s a place without a time.  That may not make sense, but it’s as clearly as I can state it.

Of course, you don’t come to Haché for the atmosphere (at least, I don’t know why you would, with both Café Stella and Winsome a stone’s throw away).  You come for the hachés.  They are billed as French-style steak sandwiches.  Haché, of course, doesn’t call them steak sandwiches.  Depending on what part of the menu your eye darts to first, you’ll see them called hachés or burgers.  In point of fact, they’re burgers with patties made of ground sirloin steak.

That ground Angus sirloin patty is swathed in a weblike loose-weave blanket of American cheese and topped a leaf or two of bracing lettuce, a couple discs of vermillion tomato, translucent halos of red onion, and a thin glaze of Karma sauce, which tastes like a mashup of Thousand Islands and harissa-spiked mayonnaise on a hearty, earthy cracked wheat bun.

While the sirloin patty is often framed as something new and different, it really is more an attempt to elevate a classical form.  It renders the patty less greasy, more inherently flavorful, cleaner than its brisket or chuck cousins.  It is noticeably fresh, albeit a shade overcooked.  The seasoning – on the outside of the patty only – cannot fully compensate for the fact that the patty is too well-done.  Since the meat on the inside of the patty remains unseasoned, once you’ve broken through the outer crust, there isn’t much beneath it in the way of flavor.

The other garnishes are fresh, well-proportioned, subtle.  The onions, though raw, are not too sharp, offering a gentle pinpricking sting.  The lettuce is parchment-delicate, not crisp, not wilted and chewy.  The tomato is bright and succulent, a burst of freshness to wash over the finish of each bite.  And the sauce has a whisper of heat amid the creamy cool of the stuff, leaving a lingering suggestion of slow spice.

This burger is a nod to the classics.  It is different, but it’s not revolutionary.  Not forced.  It’s organic, tried and true.  Some might think that is something for which to apologize.  They might try and frame this to highlight some gimmick that might capture your attention.  They might try and make this sound like something it’s not just to make it sound fresh.  They might be tempted to swap out the resplendent Telecaster for a Korg.  They should resist that temptation.  Drum machines have no soul.

The York

img_0674It feels like October has been all about the Chicago Cubs and their date with destiny.  They’re the latest beneficiary (see also 2004 Red Sox, 2010 Giants, 1998 Jay-Z) of the special treatment we give to baseball teams that are awful for long enough.  After over a century of losing, the Cubs – finally – are good.  And like the Red Sox, the Giants, and Jay-Z before them, the entire nation (but for we select few who don’t share the impulse for alacritous bandwagoneering) will love them until they finally win.  Then we’ll revile them for doing the very thing we hoped they’d do all along.  To be a “lovable loser,” you have to keep losing.

I watched the final innings of Game 1 of the National League Championship Series at The York, which was a Highland Park mainstay long before Highland Park was cool.  It’s a vaulting industrial space, where Edison bulbs throw barely enough light on roughly erased chalkboards sporting the menu of the day, and onto the carmine bricks behind.  The one television is located inconveniently at the back end of the bar, obscured by something from almost any angle.  It was there that I watched Adrián González smack a game-tying single, and then shortly thereafter, Miguel Montero be spoon-fed a hanging slider with the bases loaded.

Much like the Cubs, the York has established itself as a good-natured neighborhood standard.  And much like the Cubs, it’s kind of hard to see what all the fuss is about.  Besides the cool (but imitable) vibe, the cocktails are weak, the food is fine, and the staff just mostly competent.  The clientele is a weird mashup of young fathers and old bachelors, thirty-somethings all.  It’s as if the York is the last place where those two demographics can meet and remember times not too many years ago, when their lives looked more alike.

Kristen, Tristan, Peter, Shahin, Kelsey and I took a trip to the York for dinner to catch the end of the baseball game before going to Creep LA, which – spoiler alert – was basically me paying $53.50 to be called “daddy” by an emo kid in lingerie and then locked in a closet the size of a moving box (with two other people, one of whom, blessedly, was Kelsey) by a small man in yoga pants.

The Order: Cheddar Burger, medium rare

The Price: $15

The Burger
The York’s burger is served on Bread Bar brioche, a heavily marbled sirloin and chuck hybrid patty, rocket (which, more or less, is hipster for “arugula,” which, more or less, is douchebag for “bitter spinach”), harissa aioli (harissa being a North/West-African chili paste that you may have run into at Moun-Of-Tunis, Koutoubia, or a similar spot), and pickled onion.  And cheddar, obviously.

Just by reading that list of ingredients, you may have the impression that there’s a lot – potentially too much – going on here.  That was my concern going in, too.  Imagine my surprise, then, when the burger actually wound up being strangely tame on the palette.  There was no pinching bitterness from the flaccid arugula, no astringent sourness from the too-soupy onions, no blunted bite from the aioli.  Everything got mixed together, reduced into some tasteless primordial ooze, the culinary equivalent of Cage’s 4’33”.  And to top it all off, there wasn’t even the buttery, eggy, cloudlike sweetness you would expect from the brioche (though this had more to do with the fact that it tasted a day old than any fault of poor Bread Bar’s) it was crumbly and Gobi-dry.

And that’s a shame, considering the patty was quite well-conceived.  Heavily marbled and a well-executed medium rare (evenly rouge-hued and barely bloody), the flavor was rich, the texture hardy and coarse.  It was crisped on the outside, but retained its juiciness exceptionally well.  Just like Charlize Theron in The Devil’s Advocate, it deserved a better supporting cast (instead, we got Shouty Al and dead-eyes Keanu; I’ll leave it to you to decide whether that’s a metaphor or not).

Were I predisposed to being snarky, I’d say the good news is that the burger York was only the third-most unpleasant thing that happened to me that night.  But since I am miles above snark and the solicitation of cheap laughs, I’ll leave it at this: Notwithstanding all the neighborhood affection, all the history, all the prescient neo-industrial decor, the York’s burger left a bad taste in my mouth.  Maybe not quite as bitter and caustic as Miguel Montero left, not quite as parched and salty as being locked in that closet, but the fact that those three things are part of the same conversation probably tells you all you need to know.

If you never caught the new (like, that new new) Star Wars movie, then you missed out on Kylo Ren, the most angst-addled villain to grace the silver screen in quite some time (you may know him better as the darkest-skinned – but still white, of course – person on Girls).  See, Kylo Ren is angsty because he wants very badly to be compared favorably to Darth Vader.  He wants to be the next Darth Vader.  So he acts and talks the part.  He commands with unforgiving brutality.  He wears the mask that changes his voice, even though he doesn’t need it.  Think of his relationship with Darth Vader as being kind of like Rivers Cuomo’s relationship with Buddy Holly.

And much like Cuomo, he just isn’t quite as special as his idol.  Deep, withering suspicions – that he’s ultimately just a pale imitation of the thing he strives to be – roil in him.  They consume him.  And most of all, they make him hate the character in the film who he recognizes as truly special, truly significant.  She achieves everything he’s worked so hard for, and she doesn’t even have to try.

It’s a common trope in our world and our folklore: the figure who longs to be a feature of history, but really is just a footnote.  These are people with lofty aspirations to emulate and evoke truly monumental figures, but ultimately, they are undone by their inability to recognize that the mere imitation of an act or a sound may not – and probably will not – capture the subtleties and complexities that exist beneath it.  What I mean is, Kylo Ren choking a person out as part of his WWDVD? mentality is quite different from what animated Darth Vader – namely, living at the nexus between guilt and doubt and rage.

Similarly, putting together a burger that features some of the same ingredients as those featured on the best chain burger money can buy doesn’t guarantee that you’ll best In-N-Out.  And so, in a swaggering and expansive outpost on Santa Monica Boulevard, Shake Shack joins the ranks of these reductive imitators, clamoring for attention and plaudits, begging for favorable comparisons to a great institution.

Shake Shack is the latest in a long line of burger chains that demand to be compared to In-N-Out.  It is a chain that builds buzz via sophomoric articles like this.  Never mind that the two are in no way comparable.  The one is an international chain with an expansive menu (including three different burgers, seasonal/weekly/monthly/whateverly flavors of ice cream, bespoke craft beer, Abita root beer on tap, Cold Stone Creamery style concretes), the other is willfully limited.  The one is surprisingly expensive, the other almost guilt-inducingly cheap.

But the comparison is being made.  So if you drive by Shake Shack, you will see crowds of impossibly cool West Hollywood types: New York imports with trendy haircuts; t-shirts featuring a sneering slogan or maybe a reference they only almost understand; shadowed and lined eyes drooping under the weight of their contempt for the world, smiling with half their face as they post a link from a blog about an article they haven’t read about a study they haven’t read but which reinforces the fact that everyone who disagrees with their particular opinion on their particular cause celebre du jour (based on exhaustive review of numerous blog posts like this) is ill-informed and probably malicious.

These are people bound together by fibrous, almost extant strands of supercilious energy, people who are fueled not by the Krebs cycle like the rest of us, but by the knowledge of their superiority.  And even for these walking superlatives, the need to know if Shake Shack really is better than In-N-Out is so pressing, so dire, that it can wrest them from the urgent business of being better than you.

I went with my parents and Kelsey.  Because while I may not be cool, I am the purveyor of a publication about burgers in Los Angeles, so I’m drawn to trendy burger spots like a fly to a turd.

The Order: Shack Burger

The Burger
Roughly speaking, I think there are two types of people who might argue that Shake Shack is better than In-N-Out: the first are the reflexively contrarian naysayers.  These are people who don’t have particularly strong or well-developed feelings about In-N-Out (or any alternative), but dislike its ubiquitous appeal and enjoy the idea that their opinion is challenging and controversial.  Then there are people who need New York to be better at everything (rather than just better at being bigger and smellier).  I’ve talked about this phenomenon at some length before.

The goal of this piece, though, is not to take up the issue with either group.  In point of fact, I prefer not to entertain the comparison at all.  As I mentioned before, these restaurants are different enough that the comparison itself is more than a little spurious.  Shake Shack is a peri-industrial hipster chic millennial iteration of a soda fountain, whereas In-N-Out begins and ends as a burger stand out of time, a relic of its founding age.  Another reason behind my rejection of a comparative discussion – and I smirk as I type this – is that these two products are not in the same league.

Shake Shack’s offering features an oversalted, overcooked patty, watery tomato, heat-wilted lettuce, and insipid Thousand Island (Shack sauce) between two feeble, infirm, too-doughy potato buns (this actually surprised me, because I remembered the buns being much better when I first tried Shake Shack in Washington, D.C.).  The entire presentation is a pittance, a burger so small it barely qualifies as a burger.  You will not savor every bite, and after you finish, you will wonder why you waited in line for so long with all those impossibly self-obsessed trendchasers and paid more than double the cost of a Double-Double for it.

If in Shake Shack you were hoping to find The Chirping Crickets, you’ll have to settle for Raditude.  If you were hoping for Luke’s father, you’ll have to settle for Leia’s emo brat.  Shake Shack talks the talk.  It’s high on swagger and hype, but it’s little more than a well-appointed disappointment.  This restaurant doesn’t deliver a product worth mentioning in the same sentence as In-N-Out, let alone comparing to it.

I remember when Give Up by the Postal Service came out.  I was a sophomore in high school.  It was before winter formal.  That particular winter formal was to be a rare triumph for me in the romance department.  I took one of the prettiest and most popular girls in the freshman class.  Unfortunately, as it turned out 1) I wasn’t very attractive (please indulge my optimistic use of the past tense), 2) she was out of my league, 3) I’m inveterately and painfully awkward, and 4) teenagers are a heartless sort.

The result: she bolted as soon as we arrived, and spent the entire evening with confident, attractive junior alpha males who played sports and got bad grades.  Meanwhile, I, the archetypal beta male, sat on a bench staring into a swimming pool, waiting for high school to end, and playing various tracks from Give Up in my head to pass the time. This admittedly depressing scene was interrupted when I was rescued by my friend David and his date Sara (incidentally, about halfway through “Clark Gable”).

I still wonder why that album came into my head, especially considering my tortured relationship with it.  I hated to like Give Up.  See, some Death Cab for Cutie fans were nervous when Give Up dropped (these were the Sub Pop days, when Death Cab fans were less numerous and more proprietary than today’s breed).  Publicly, we worried side projects portend artistic restlessness, or worse, stagnation, that they threaten to reveal a beloved artist reduced to repackaging old ideas instead of presenting new ones.

Privately though, we’d admit that our real issue wasn’t artistic; it was that side projects have the whiff of infidelity.  Death Cab fans liked to envision Ben Gibbard poring over ragged spiral notebooks scribbling the lyrics to the next “A Lack Of Color,” not seeking new modes of expression.  Him having another band felt like a betrayal.

What an odd feeling. It’s not as if I didn’t love Ben Gibbard just because Give Up came out.  It’s just that the release of Give Up made me face all facets of that love, even the ugly ones: affection, loyalty, fear (of change and of loss), comfort, complacency, possessiveness, jealousy.  The only thing more frightening than watching someone you love change is the prospect of getting left behind somewhere along the way.  So I listened, with layered trepidation.

I find these feelings have survived in me, and they resurfaced again recently when Neal Fraser diverted his attention from Redbird to give Fritzi the full sit-down restaurant treatment.  When Fritzi became something more than a whimsical pop-up or a window at Arts District Brewing, that familiar proprietary jealousy, that envious dogma of mine, was impossible to escape, even though culinary side projects often work out just fine.

The Order: Fritzi Burger

The Price: $11.50

The Burger
Maybe you’ve never heard of Fritzi.  It would be hard to fault you, actually.  It first surfaced as a pop-up, then soft-opened as a practically nameless take-out window nestled in a corner of Arts District Brewing, where everyone from the merely buzzed to the blacked out could partake in some high-class, high-carb hangover prophylaxis.  The only signage to speak of was a large marquee above the window that glowingly admonished all passers-by: “DON’T FORGET TO EAT.”

By the time Fritzi actually opened a dining room directly next door to Arts District Brewing (serviced by the same kitchen as the take-out window; the two spaces are less adjacent than they are interlocked), it would have been easy to not notice.  There was almost no fanfare; besides, we’d been eating off that menu for months.

But Fritzi commands attention.  It is the brainchild of Neal Fraser, who ranks among the most deadly serious chefs in the city.  The fare is fast-food inspired and fundamentally uncomplicated.With quintessentially Arts District pretentiousness (i.e., trying far too hard to project a laid-back, industrial Bohemian charm), Fritzi will tell you they serve “artisanal nosh.”  That means no of-the-moment crudo, no robust and hearty braised goat gemelli, and – sadly – no peri-eponymous (I can’t resist making the epunymous joke) tray of veal.

Nothing here is a signature dish.  This is an off-duty project, a glimpse at what Neal Fraser might make at a cookout – nothing too high-minded…but, well, he’s still Neal Fraser.  As such, expect sophisticated, subtly reimagined classics.

The Fritzi Burger is, for lack of a better term, so Fraser.  Each component of the conventional burger is rethought, elevated.  This burger offers a hybrid patty (Nueske bacon and beef) that is given ample (viz., nine hours) sous vide time; a generous smear of Fontina fondue which offers a gooey, honeyed nuttiness; a sweet Calabrese relish with a whisperingly slow-hot finish; a fresh salve of mild thousand island; and iceberg lettuce to add cooling textural contrast.

The patty is a masterstroke, a subtle, intensely flavorful execution of an idea that sounds excellent in theory but often is butchered grotesquely in practice.  The Nueske bacon imparts a smoky, marbled dimension to the beef, evoking the faintest thoughts of a Texan barbecue pit.  The fondue creates a sumptuous, almost silken coating around the patty, mild and comforting.  Both sauces are excellent, and work well enough in concert with one another.  They offer a few redundant notes, but ultimately elevate the entire experience.  I was glad for the lettuce, if only because it offered a bit of complexity in a burger that otherwise verges on textural monotony.

While Fraser excels in reimagining individual ingredients, he sometimes almost loses sight of the forest for the trees.  It’s fine to reshape each piece of a puzzle, especially if you improve each one; but change them enough, and they won’t fit together.

In the case of the Fritzi Burger, that’s just a distant threat – this burger hangs together well, never veering into incoherence.  But it also is a mildly unsettling dish, because – as a whole – it doesn’t always feel completely intentional.  But existential niggling aside, this burger is stellar, not to be missed, and yet another shining example in a litany of Neal Fraser’s innovative genius.

Ultimately, no matter how rabid a Death Cab fan I was, I listened to Give Up.  I couldn’t help myself.  In my more honest moments, I recognize it as a superior product to solidly (maybe conservatively) 85% of Death Cab for Cutie’s oeuvre.  But even short of that admission, I know I put aside my feelings of betrayal on behalf of Gibbard’s bandmates because I wanted to understand what was compelling enough to divert his creative focus.  I didn’t really listen because I wanted to.  I listened because I had to.

So if you felt similar vicarious betrayal when Chef Fraser took time away from Redbird to launch Fritzi, you probably also feel a similar morbid curiosity regarding what Fritzi is all about.  Succumb to it.  This burger may not be better than 85% of the menu at Redbird, but it is too good to be missed owing to proprietary hipster envy.

On some day during your life in Los Angeles, you will experience a moment of being utterly overwhelmed by Grand Central Market.  In that ever-trendier, neon-lit, culinary sprawl you will find yourself staring off into space.  Your eyes will start to glaze over as you bathe in the crowded fluorescence and the pan-ethnic gamut of scents and the heat of stove and sun.  You will equivocate, vacillate, hesitate, and calculate.  You will consider – and this time, really consider – whether braving the line at Eggslut is worth it.  (Hint: It’s never worth it.)  You will think, “If only DTLA Cheese wasn’t out of that burrata toast.”  (Hint: They’re always out of the burrata toast).  You will quietly entertain the notion that today is the day you put aside your existential objection to vegan ramen (Hint: You’ll never put aside your existential objection to vegan ramen – and that’s okay; Vegan Ramenism is the lone form of bigotry that is socially desirable).

I’ve had a few days like that.  On those days, I usually wind up at Belcampo.  In the midst of that kind of uncertainty, I take comfort in the fact that even the worst case scenario includes me eating very, very high quality meat.  Now, admittedly, I didn’t find myself particularly overwhelmed by Grand Central Market today.  I just found myself in the mood for a burger.  So I stopped in at Belcampo and ordered the Double Fast Burger.

The Order: Double Fast burger

The Price: $9.00

The Burger
The nice thing about Belcampo, which has shown up on the Project before, is that you can always count on extremely high quality meat.  When they tell you that the Fast Burger is their homage to the drive-thru burger, you should only believe them so far.  In the main, I can think of no drive-thru slinging burgers made from beef this luxe.  More subtly, this burger is not an homage to the drive-thru writ large; it’s an homage to In-N-Out.

Both of my regular readers will know that I am not opposed to doling out high praise to Double-Double rip-offs.  But imitating the greatest burger chain on the planet is a high-risk, unforgiving enterprise.  And Belcampo’s attempt, while estimable, falls noticeably short in several respects.

In the first place, the patties, while certainly flavorful and of the utmost quality, are not well packed, and too flimsy.  They never quite fell apart while I was eating, but threatened to on several occasions.  And while it’s admirable to use such excellent meat, Belcampo’s purism means the beef is barely seasoned at all.  That, coupled with the fact that this beef actually is just the trimmings of the beef from everything else they use, means you won’t be able to pin down precisely what you’re eating, and it may even vary from bite to bite.  One bite may ring out with marbled echoes of Porterhouse, while in the next, gritty chuck will elbow its way to the forefront.  The quality of the meat is there, but the initial momentary thrill of variety quickly gives way to frustration at a patty that is unfocused and incoherent.

The toppings, in the aggregate, are fine.  Like its cousin the Belcampo Burger, the double fast burger features lettuce that is a bit too wilted and sad not to notice.  The tomato does not offend, despite being a bit slippery and lacking in that sunny juiciness that you hope for.  The cheese is a standout – housemade American that is creamy and unfussy.  It oozes about the patty like sap on a tree stump.

It’s hard to argue this is a better buy than In-N-Out.  The beef is the centerpiece of the burger, but the patties are not as carefully composed, and the toppings are nowhere near as fresh-tasting.  The bun, too, is a pale imitation of a pale imitation of In-N-Out’s standard setter.  The lack of sauce is the final insult: an incomprehensible choice that seriously undermines the balance of the burger (you’ll appreciate In-N-Out’s dressing that much more after eating this).*  And at $9.00, while it’s still quite a bargain, it’s vastly more expensive than In-N-Out (or Burgerlords).

It occurs to me that this review reads pretty negatively up to this point.  Belcampo does a lot of things right.  They offer ingredients-first burgers that don’t attempt to hide behind gimmicky ingredients or high-cuisine shenanigans.  To the extent this offering falls flat, it does so relative to its industry-topping comparables, In-N-Out and Burgerlords.  In its own right, it’s a good burger.  Inconveniently, though, it has some stiff competition, and that’s hard to forget.

It may be that the Fast Burger is the “worst case scenario” for Belcampo to which I alluded above.  Indeed, the very concept of a drive-thru inspired burger seems anathema to the Belcampo’s whole schtick.  And that’s really the big problem here: Belcampo isn’t a burger stand.  It’s not a fast food restaurant.  It shouldn’t pretend to be one.

*Because this burger did not have sauce, I haven’t included sauce in my ten-point scale.  However, the lack of sauce affects the quality of the burger, which I’ve reflected in a lower score in the Balance rating.  The overall score – without the sauce category – is out of 90.00, which I then normalized to 100.00 by doing cross-multiplication.  Be impressed.

Okay, so straight up: Grill ‘Em All is the weirdest place I’ve been to since the Project started. No doubt. Second place is so far behind that I literally don’t even know what it is.

Here’s the story: Ryan Harkins and Matt Chernus won The Great Food Truck Race and then bought this snug little cranny in an Alhambra strip mall. Grill ‘Em All, for the philistines in my readership, is a play on the name of a pretty rad album by Metallica (you know, before they started sucking…and also sucking).

The entire place buys…well, heavily into the heavy metal theme. While I waited for my food, I listened to dated (and second-rate) metal and watched a rerun of a Sting v. Ric Flair NWA Heavyweight Championship match. It’s a weird theme on its own, but throw in the hilarious contrast with the unavoidably milquetoast clientele, and spending a half hour there borders on surreal.

Having said that, the theme doesn’t really seem like a gimmick so much as the product of a genuine fascination with heavy metal. Given that basically all of the cultural references this place makes would go soaring over the British faded heads of the One Direction-obsessed members of the digital native generation, I think it’s a safer bet to assume Harkins and Chernus just like metal music a lot. Probably more importantly, Grill ‘Em All has endeared itself to foodie types for blending culinary innovation with caloric opulence. I went to try one of their many artery-cloggers.

The Order: Napalm Death (half pound patty, pepper jack, pickled jalapeño, cream cheese, habanero aioli, jalapeño poppers)

The Burger

I mean, wow. It’s hard to know where to start. This burger is unbelievably overwhelming. Basically, it presents different iterations of the same two flavor components: chili and cheese. The idea is that this burger is supposed to be punishingly spicy. It you’ve got any tolerance for heat at all, you’ll laugh that right off. The jalapeños are meek, and whatever bite the habanero might have had goes out the window because aioli is just never spicy.

Having said that, the various chili-centric ingredients allow for the flavor of the chiles to shine through. This is relatively rare, given that most burgers do not feature peppers in any central way. In this burger, the flavor – especially of the jalapeños – is very present in the flavor profile. The jalapeños have a gentle heat (blunted by the pickling or, in the case of the poppers, the cheddar) and a peppery sweetness which emerges from the caustic cut of the vinegar. The poppers are crispy on the outside and almost impossibly gooey on the inside. They’re a decadent addition, messy and unpretentious.

The patty is a half pound cooked medium rare. Grill ‘Em All’s medium rare is a bit overcooked for my tastes, but still juicy enough. There is very little char on the patty, which is also relatively lightly seasoned. As a result, for all its heft, the meat doesn’t really communicate much in the way of personality. It’s a little insipid, and not a worthy centerpiece. It’s saved a bit by the habanero aioli, which is surprisingly complex and picks up the floral flavor of the habanero pretty well. It makes up for what the patty lacks in charm.

The various cheeses are the most interesting part of the burger. They neutralize most of the heat, which allows the flavor of the chiles to rise. But on their own, cream cheese and pepper jack are a counterintuitive combination. The pepper jack is pepper jack; it starts with a kick but quickly retreats into buttery delicacy. The cream cheese, melted from all the heat, comes in on the finish. It is relatively mild, but a little funkier. It really dominates the back-end of each bite.

At first blush, this burger might seem to have a little bit of a kitchen sink vibe. But the ingredients hang together surprisingly well. The result is a hugely unconventional but surprisingly coherent presentation. With all that’s going on, there’s a little more here than the bun can contain at times, but the Napalm Death tastes a lot more sophisticated than it sounds. Or, sophisticated for a burger with jalapeño poppers on it, anyway. It may not be as sinister (or as spicy) as its name may indicate, but it’s still a good choice if you’re in the mood for something unconventional.

Everyone on Yelp went here after Pie ‘N Burger was featured on Food Network as the third best burger in the country. Needless to say, it got a ton of hate from the insufferable masses (“Whatever, it’s not that good. I’ve definitely had better…I won’t name a better place right now, because that would require me being constructive and actually hazarding an affirmative opinion, but I totally could if I wanted to, because I know a lot about food. Find me on Instagram!”).

I don’t trust Yelp, and I’d respectfully submit that you shouldn’t either. In the main, it’s a morally bankrupt market distortion factory. No, seriously. But like actually though. But the real problem (or well, the other problem besides Jeremy Stoppelman doing his best Frank Costello impression) is that Yelp is really just full of people with shitty opinions. People who depend on someone else’s interface to get exposure for their crappy opinions. People who lack the courage to just run a failing blog.

Right, I’m done shitting on Yelp. For the moment. But it does suck. So there.

Okay, I’m really done. Promise.

Anyway. For those of us who grew up in Pasadena, Pie ‘N Burger isn’t that place we read about last week and rushed to so we could look discerning by posting about how overrated it is. It’s a place we grew up with. A place we went to on occasion. A place we liked, but with which we weren’t obsessed. I went to school literally blocks away. It’s familiar. Look, I’m trying to establish editorial credibility. Just let me have this.

So yeah. Kevin, Shanil, and I stopped off this morning for a breakfast of burgers and a shared pecan sweet bun (yes, shared).

The Order: Cheeseburger

The Burger
Pie ‘N Burger is younger than In-N-Out by fifteen years, but you’d never guess that after stepping inside. From the Formica countertops to the clientele, this place is old. It doesn’t have the slick, spit-shined aura of efficiency you find at In-N-Out. But then, that’s not really the vibe they’re going for at Michael Osborn’s Pasadena staple. No, Pie ‘N Burger focuses on food. That focus comes largely at the expense of, well, everything else: you know, things like ambience, modernity, attentiveness, thorough dishwashing, and basic human friendliness.

Needless to say, Kevin, Shanil, and I were the slickest, youngest, most debonair things in the room. Which may or may not surprise you depending on your estimation of us (be gentle). In spite of that, it took a minute (or eight) until the server deigned to come over and take our order. Once she did, though, things moved pretty quickly. The burgers came out wrapped in wax paper. The severely, wonderfully charred patty (I ballpark it at a third of a pound, but it may well have been heftier than that) herniated out from between the buns, a yellow film of cheese still melting on top. Short, thin introns of grilled onion swam in a sumptuous pink matrix of creamy, tangy, house-made Thousand Island. Besides that, there were a few pickles and basically an entire lettuce patch.

The patty is absolutely excellent. The exterior is blackened into a delicious, savory crust containing the surprisingly juicy, flavorful interior. It’s arguably a touch overcooked, but only enough to offend personal preference, not enough to compromise the objective quality of the burger. By which I mean I like a burger a little more rare, but this patty wasn’t cooked to the point of dryness. There was plenty of flavor remaining to satisfy.

The grilled onions were another highlight. Left to stew in Thousand Island, the flavors interacted beautifully, creating a cool, wonderful complement to the patty. The flavors were linked nicely by the shared grill flavor, but otherwise brought different personalities to the burger: the patty was crackling and savory, the sauce cool and sweet. The pickles picked up where the Thousand Island left off, adding a fresh, sour little snap. The buns were standard white, but toasted until their rims were black. This gave them a nice crispiness at the edges, but it softened as you went in, giving the burger a kind of textural arc.

Weirdly, all three of us shared the same major gripe: the lettuce. Don’t get me wrong, it was fresh, crisp, and wonderful. But there was just way, way, way too much of it. By the time I’d eaten all the beef, there was still a pretty enormous amount of lettuce (and bun, for that matter) left. The sheer magnitude of lettuce upset the balance of the burger, and was by far its weakest attribute. On the bright side, it wasn’t a depressing, wilted mess.

So don’t let the absurdly shitty service or the old-timey vibe fool you. Pie ‘N Burger is a standard for a reason. They make a damn good burger. It may not be the third best burger in the country, but it’s also much better than you might guess if all you did was read the propaganda on shitty Yelp. It is definitely worthy of recognition, and of your time. If you find yourself hungry for a burger in Pasadena, this is a compelling option.

The L.A. Weekly Burger Battles

I owe Shannon for the tip on this one. She managed to reach me through the thick, noxious, mind-altering fog of bar exam preparation (which is also what I’m offering by way of an excuse for the lack of reviews lately), and apprise me of something of which I was shamefully unaware.

So apparently, LA Weekly is running a burger bracket. They’ve put sixteen burgers in Los Angeles into categories (“divisions”), and they’re putting them up in a head-to-head, winner-advances tournament. It’s not clear how they chose these sixteen burgers. There were some on the list that really didn’t belong, and others that were undoubtedly snubbed. The first round is over, and here are a few quick thoughts heading into Round Two (the “elite eight”):

  • Ledlow beating out Belcampo Meat Co. is the most ridiculous miscarriage of justice since, well, this. Or this. Or this. Or this. God, that last one really hurt.
  • Actually, the whole “Fancy” bracket kind of sucks. Not only were both matchups incorrectly decided, those burgers decidedly, well, just aren’t that fancy. Though I suppose fancy is relative.
  • It’s not clear what the “New School” Bracket actually is, considering some of those places have been around longer than, say, Ledlow, and are decidedly classic burgers (I’m thinking the Oinkster).
  • I don’t know how these sixteen burgers got their feet in the door. This is arbitrary as shit.
  • If the final is anything besides In-N-Out v. Plan Check, this bracket is a crime on par with…well, this. Which isn’t to say that Plan Check should even be in the final, because…ugh, where do I even start?

Now, your humble correspondent was snubbed for an invitation to judge the competition. I’m as perplexed as you are. However, I’ve decided to do the next best thing and offer you my suggested votes for the next round. Do with this information what you will.

Fancy Division: Pick Petit Trois (because you can’t pick Belcampo (because Gillian Ferguson’s tastebuds apparently are less functional than the cuff buttons on an rented tuxedo)).

New School Division: Go with Plan Check. Neither of these places really represent the best of what I think of as “New School” burgers in Los Angeles, but it’s the better of the two.

L.A. Originals Division: Close, but it’s got to be Father’s Office. But the even closer call would be “Which of these places offers a more unpleasant dining experience?” That’s a genuine toss-up.

Fast Food Division: If you have to ask, we’re obviously not in one another’s lives. It’s In-N-Out. By a marathon of country miles, it’s In-N-Out.

This is one to watch closely. In the meantime, you definitely should go do your civic duty.
